Easy Road Trip Snacks For Your Kids

Road tripping with your family is a fun way to enjoy a cost effective vacation. Road trips are fun because you can be flexible. Everyone will be able to pick their choice of stops along the way to make for a more personal and fun experience.
There are certain things that you should never cut out of your travel plans when on the road and snacks are one of them! Do not to get in the car unless you have plenty of quick, easy to eat snacks on hand. After all, it doesn’t take much for the kids to get hangry! Of course it would be hard to take big meals on the road so we we’ve compiled a list of three favorite, quick and easy road trip snacks you can make to ensure your kids stay full and content on the drive.
Three Easy Road Trip Snacks:
Ham Sandwiches:
Ham sandwiches are a classic. This recipe gets creative and adds in greens because getting those veggies into the kids is important.
Ingredients:
- sliced deli ham
- 8 slices bread (your choice- grain white, rolls)
- 3 tbsp Dijon mustard
- 3 tbsp mayonnaise
- Lettuce
- 16 Cucumber slices
- 8 Beefsteak tomato slices
- Mix the Dijon mustard and mayonnaise together to make a dressing.
- Spread the dressing onto each slice of bread.
- Layer with lettuce, ham, then tomato, and finish with cucumber.
- Add the top slice of bread, cut in half, and pack.
Greek Chicken Pita:
These simple Greek chicken pitas are an easy, filling meal on the go.
Ingredients:
- 2 chicken breasts
- 1 tsp oregano
- Juice of ½ lemon
- 1 tsp garlic paste
- a tsp tarragon
- 1 tsp cumin
- a tsp ginger
- Salt and pepper
- 4 Pieces of Pita Brad
- 12 cucumber slices
- 8 beef tomato slices
- ¼ cup feta, cubed
- Hummus
- Tzatziki
- Chop your chicken into thin slices and add all herbs and spices, along with lemon juice. Marinate for 10 minutes.
- Heat a frying pan with oil and pan fry the chicken for 4 minutes on each side.
- Spread hummus inside your pita, follow with tomato, cucumber and chicken.
- Dollop some tzatziki in, add some feta, and enjoy.
Rocky road:
We couldn’t make snack recommendations without talking about chocolate! The great thing about Rocky road is that you can mix whatever you want into it. Let your imagination run wild and improvise…just make sure you include plenty of chocolate.
- 2 cups milk chocolate
- 1/2 cup white chocolate chips
- 1 cup mini marshmallows
- ½ cup cookies (graham crackers, shortbread etc.)
- ½ cup chocolate bars (any type you like)
- In a bowl over a simmering pan of water, add milk chocolate and melt. Make sure the water doesn’t touch the bottom of the bowl otherwise the chocolate will burn.
- Chop up chocolate bar of choice and crush your cookies into small bite size pieces.
- Once the chocolate is melted, add all of your ingredients to the bowl and mix together until thick.
- Pour mixture into a lined baking dish and chill for an hour.
- Once chilled cut into small pieces, and get ready to hit the road!
